The Same Science That Froze Ice Cream in the 1800s Is Cooling Your House Right Now

National Ice Cream Day lands on Sunday, July 19 this year, and here at Team Pendleton we fully support celebrating it. We're an HVAC company, so we can't just hand you a scoop and walk away. We have to tell you the secret hiding inside that scoop, because the science that made ice cream possible long before electricity is the exact same science keeping your Colorado Springs home comfortable today.

Yes, really. Your air conditioner and great-grandma's ice cream churn are cousins. Let us explain.

How People Froze Ice Cream Without a Freezer

Picture a summer porch in the 1800s. There's a wooden bucket, a metal canister of sweet cream inside it, and a kid whose arm is about to get very tired from cranking. Packed between the bucket and the canister is a mix of ice and rock salt.

Here's the part most people never learned. The salt isn't there for flavor. It's there to cheat.

Plain ice melts at 32 degrees, and 32 degrees is not cold enough to freeze cream, which has sugar and fat in it that lower its freezing point. But when you add salt to ice, the salt forces the ice to melt faster and at a much lower temperature. That salty slush can drop down near 8 degrees. Suddenly the cream doesn't stand a chance.

And here's the key idea, the one that connects everything: melting ice absorbs heat. A lot of it. As the ice and salt mixture melts, it pulls warmth out of the cream through the canister walls, over and over, until the cream freezes.

Great-grandma wasn't adding cold to that ice cream. Cold isn't a thing you can add. She was removing heat from it. That one sentence is the entire secret of refrigeration, and it's worth reading twice.

Your Air Conditioner Does the Same Thing, Just on Repeat

So how does this connect to the system humming away outside your house in July?

Your air conditioner also cools by removing heat, and it also uses a substance changing form to do it. Instead of ice melting into water, your AC uses refrigerant changing from a liquid into a vapor.

Inside your home, warm air blows across a coil filled with liquid refrigerant. As that refrigerant evaporates, it soaks up heat from the air, just like the melting ice soaked up heat from the cream. The air comes out the other side cooler, and the refrigerant carries the stolen heat outside. Out there, the system squeezes the refrigerant back into a liquid, releases the heat into the outdoor air, and sends it back inside to do it all again.

The big upgrade from 1850 to today isn't the physics. The physics never changed. The upgrade is that your air conditioner recycles its "ice" thousands of times an hour instead of using it up. The porch churn had one melt. Your AC has an endless loop.

Even the hand crank has a modern twin. Somebody had to supply the muscle back then, and that was the kid turning the handle. In your air conditioner, that job belongs to the compressor. It's the hardest working part of the whole system, which is why we pay it so much attention during maintenance visits.

A Few Fun Numbers for Your Next Cookout

Since it's almost National Ice Cream Day, here's some trivia to share over dessert:

Ice and salt brine can reach roughly 8 degrees, cold enough to freeze cream on a warm porch

There's one more wrinkle for those of us living at 6,000 feet and up. Our thinner air doesn't transfer heat as efficiently as the air at sea level, which means cooling systems here work a little harder than the same equipment would in Kansas. It's the same reason baking recipes need adjusting at altitude. The physics is honest, but the conditions are different, and a system that's sized and tuned for our elevation will always outperform one that isn't.
